Faces Everywhere...

Food that bites back?!
Have you ever had one of those days where it seems the universe is speaking to you at every turn? Me neither, but today has already provided me with two unanticipated appearances of faces in unexpected places. The first one is this photograph of the amazingly good vegan lasagna LG made last night. I took the pic of my massive portion before digging in. When I downloaded it to my computer this morning, I laughed out loud. I showed LG and she reacted the same way. The one-toothed lasagna monster looks more menacing than he actually was. I ate him. Anyway, I thought that was a fun revelation...maybe I need to get out more...I don't know. I refuse to stop finding silly things entertaining. Thankfully, LG feels the same way...my position is safe. More about the lasagna later.

What does it mean?!
As I loaded the lasagna monster photo I was chuckling to myself and laid my head back on the couch to stretch my neck. On the ceiling, just over my head was another face...a full spectrum of smiling lips looking down on me!  This one was both less menacing and less delicious...I'm assuming. I made no effort to taste this guy. Ain't life a hoot!

Now, about that lasagna...it was the best vegan dish we've had to date. LG found the recipe on the Healthy Girl's Kitchen website [http://healthygirlskitchen.blogspot.com/search/label/healthy%20recipes] It was a little more time consuming than some of the other stuff we've made, but I didn't mind (since LG was actually doing 90% of the kitchen work.) It baked for an hour and the prep work took about 25 or 30 minutes. The ingredients were, of course, all vegan, fat and sugar free as well as organic (most of it, anyway.) We pretty well used every kitchen device we have - except the new Japanese spiral thingy. The food processor mixed the tofu, spinach and pine nuts layer, the mandolin sliced the zucchini, and there was no small amount of old-school knife work going on. We used brown rice lasagna noodles and were very satisfied with their texture and taste once again. I'd made a large batch of marinara sauce earlier in the day, and we sauteed (in water, of course) a huge frying pan of chopped onions and 2 pounds of mushrooms for another layer. We ate very large portions and still have over 3/4 of it left. We're looking forward to getting hungry for lunch!

LG told me this morning that she was expecting to have gained a little weight after yesterday's large bowl of cooked grains, "hamburger" lunch and lasagna dinner. In fact, according to the trusty scales, she found she'd actually lost another half pound!

Speaking of wine, our wine room is just about finished. I painted most of the exterior yesterday and, once the trim is done and I've spiffed it up I'll share a photo of it. Wine is not part of the Engine 2 Diet phase of our personal food transformation, but it is a food we enjoy very much and intend to reintroduce onto our food list after our current 4 week start-up.

Well, off to get started on my list of chores. This is the first time I've ever been eating to lose weight (successfully) and feeling more energetic. I only weigh on Sunday mornings so I don't know how that whole fat loss thing has progressed this week. I guess we'll all know Sunday! [Note: LG is running around cleaning house, ergo she didn't do her usual pre-publish edit. So, if there are any typos, it's her fault...;->  ]
